"Stuffing" Pie

Ingredients:
13 oz 99% lean raw ground turkey - should cook to 10.5 oz (1.5 lean)
.25 cup Kraft 2% Mexican cheese (.25 lean)
.5 cup egg beaters (.25 lean)
1.5 cup fresh spinach (1.5 greens)
1.5 cup fresh chopped white mushrooms (3 greens)
1/4 TSP salt (1 condiment)
1/4 TSP pepper (1/2 condiment)
1 chopped garlic clove (1 condiment)
4 wedges Laughing Cow French Onion Light Cheese (2 healthy fats)

2 servings: 1 lean, 2.25 greens, 1.25 condiments, 1 healthy fat

Directions:
In a large skillet, brown the ground turkey along with the mushrooms and spinach; drain well. Place in a greased 10-inch pie plate. Do not use a smaller pie plate or it will overflow. If you don't have that size, use an 8x8" or 11x7" baking dish. Mix in the cheese. In a bowl, beat the eggs, LC cheese, and seasonings. Pour the egg mixture evenly over the meat mixture. Bake at 350ยบ 35-40 minutes until set in the center and nicely browned. Let stand 10 minutes before serving.

Mexican & Greek Burgers



Mexican Turkey Burger (the one closet to the bottom of the picture)
Ingredients:
7 oz of 99% fat free lean ground turkey - it will equal about 5.25 oz (3/4 lean)
1 oz 2% reduced fat Mexican Three Cheese Blend (1/4 lean)
.25 cup mixture of chopped cucumber and tomatoes (1/2 green)
.25 cup chopped red peppers (1/2 green)
2 TSP low sodium taco seasoning mix - i recommend Old El Paso brand ( 3 condiments)
1 TBSP water
dash of Worcestershire sauce
dash of Tabasco - only if you want

Directions:
Place the turkey, red peppers, cucumber/tomato mix, Worcestershire and Tabasco sauce into a mixing bowl. Mix the taco seasoning and 1 tsp water in a separate bowl to thoroughly mix it, then dump it into the mixing bowl with the rest of the condiments. Mix until all ingredients are combined. Form patties (you'll get about 2 or 3 patties, depending on how big you want them). Grill, cook in hot skillet, or broil until the internal temperature is 165 degrees.

Serving: 1 lean, 1 green, and 3 condiments

Greek Turkey Burger (the one at the top of the picture)
Ingredients:
7 oz of 99% fat free lean ground turkey - it will equal about 5.25 oz (3/4 lean)
1 oz reduced or fat free feta cheese (1/4 lean)
.5 cup chopped baby spinach leaves (1/2 green)
.25 cup chopped red peppers (1/2 green)
.5 TSP oregano (1 condiment)
.25 TSP garlic powder (1 condiment)
.25 TSP salt (1 condiment)

Directions:
Place the turkey, feta, red pepper, spinach, and seasoning into a mixing bowl. Mix until all ingredients are combined. Form patties (you'll get about 2 or 3 patties, depending on how big you want them). Grill, cook in hot skillet, or broil until the internal temperature is 165 degrees.

Serving: 1 lean, 3/4 of 1 green, and 3 condiments

In the end, I actually made a two of each kind of burger. So the actual meal was 1 greek burger (.5 lean, .5 green, 1.5 condiments), 1 mexican burger (.5 lean, .5 green, 1.5 condiments), and 1 cup of lettuce as a salad with dressing (2 greens, 1 healthy fat).

Turkey Taco Salad



Ingredients:
7 oz of 99% fat free lean ground turkey - it will equal about 5.25 oz (3/4 lean)
2 tsp low sodium taco seasoning - i recommend Old El Paso brand (3 condiments)
2 TBSP water
2 cups chopped lettuce (2 green)
.5 cups chopped tomatoes (1 green)
1 oz or .25 cup 2% reduced fat Mexican Cheese (1/4 lean)
2 TBSP Hidden Valley Light Ranch Dressing (1 healthy fat)

Directions:
I browned the ground turkey in a skillet. There isn't really a need to drain the fat because the higher the percentage is, the less fat that there is left over. I mixed the taco seasoning and the water in a bowl to mix it fully. Then add the seasoning mix to the turkey in the pan and let it simmer uncovered for about 5 minutes. Using a plate (I definitely recommend a plate over a bowl), I layered the lettuce and then the tomatoes. I scattered the meat over the lettuce and sprinkled the cheese on top. Then I added the salad dressing

Serving: 1 complete meal of 3 greens, 1 lean, 1 healthy fat, and 3 condiments
