"Potato" Salad


Ingredients:
2.75 cup cauliflower (5 1/2 green)
1/4 cup diced scallions (1/2 green)
1 chopped hard boiled egg (1/3 lean)
2.5 TBSP light mayo (2.5 healthy fats)
1 TBSP mustard (3 condiments)

Serving: 2 serving of 1/6 lean, 3 greens, and 1 condiments

Directions:
Steam cauliflower until it reaches the same texture as cooked potatoes. Rinse in cold water to cool; pat with paper towel until dry. Chop cauliflower into small bites. Mix into a bowl with scallions and eggs. Add mayo and mustard and mix well. Cover and chill for one hour before serving.

Turnip Fries & Baby Burgers

Ingredients:

1 cup cubed turnips (2 greens)

1 TSP olive oil (1 healthy fat)

season to your preference with pepper, salt, and garlic powder


Directions:

Preheat oven to 425 degrees. Mix the olive oil and turnips in a bowl. Sprinkle seasonings evenly over the turnips. Spread out on baking sheet. Bake for about 30 minutes.


Serving: 2 green servings and 1 healthy fat.


As you can see in the picture, I had baby greek and mexican burger with it (see recipe here: http://beatingleanandgreens.blogspot.com/2011/07/mexican-greek-burgers.html). I was a bit surprised because I actually liked the taste of the turnips.

Cauliflower Mashed Potatoes



Ingredients:
1 1/2 cup cooked cauliflower (3 greens)
2 light laughing cow cheese wedges (1 healthy fat)
dash of salt
dash of pepper

Directions:
So, first I cooked fresh cauliflower a little longer so that they'd be softer to mix. Then I used my Ninja blender to make the rest. I put the cauliflower in and mixed it a little bit first to soften and pre-chop them. I then added the LC cheese wedges and the dashes of salt and pepper. Blending it, I periodically used a spatula to push the mix back down the sides. When it looks like mashed potatoes, then it's done.

Serving: 3 greens, 1 healthy fat, and about .5 condiment

All that needs to be added is one lean.
