Spaghetti Squash with Tomatoes, Chicken, and Feta

Ingredients:
3 cups spaghetti squash (6 greens)
1 TBSP olive oil
2 chopped garlic cloves (2 condiments)
1.5 cups chopped tomatoes (3 greens)
3/4 cup crumbled fat free feta (3/4 lean)
1 TSP basil (1 condiment)
13.5 oz cooked and cubed chicken (2.25 lean)

Directions to prepare Squash:
Preheat oven at 350 degrees F. Lightly grease a baking sheet. Cut the spaghetti squash into half longways/ Place spaghetti squash cut sides down on the baking sheet and bake 30 minutes or until a sharp knife can be inserted into the side with little resistance. Remove squash from oven and let it cool enough to be handled. Use a large spoon to scoop the stringy pulp from the squash and set aside 3 cups. Save the rest for later.

Directions to complete the meal:
Heat the oil in a skillet over medium heat. Saute garlic in oil until browned, about 2 to 3 minutes. Stir in the tomatoes and chicken and cook until warm. Using a mixing bowl, toss squash with the tomatoes, chicken, basil, and feta. Serve.

3 servings: 1 lean, 3 greens, 1 healthy fat, 1 condiment
